Ingredients:
- 2 cups self-raising flour
- ¾ tsp baking powder
- ½ tsp salt
- pinch cayenne pepper
- 200g grated cheese or feta
- ½ cup chopped parsley
- ¼ cup dried onions
- ½ cup bacon bits
- ½ cup double strength chilled AlfaLite
- ½ cup chilled soda water
Directions:
Preheat oven to 200ºC and line a baking tray with baking paper.
In a mixing bowl combine flour, baking powder, salt and cayenne pepper. Mix in parsley, onions, bacon bits and cheese. In a jug combine AlfaLite and soda water. Make a well in the centre of the dry ingredients and pour in the liquid. Mix with a knife until just combined. (if making in a food processor, pulse together the flour, baking powder, salt, cayenne, parsley, onions, bacon bits and cheese to combine. Add soda and AlfaLite, pulsing 4 or 5 times until mixture just starts to come together.) Turn out onto a lightly floured surface and pat into a rough rectangle about 4cm thick. Cut into 6 to 8 pieces or cut into rounds and place on the prepared baking tray. Bake until scones are puffed and golden and they bounce back when pressed (about 15-18 minutes). Serve warm or at room temperature, split open and spread with a little butter. Freeze if not using the same day. When ready to use, thaw and reheat for 5 mins. In an oven preheated to 220ºC.
